The aim of this research was to determine the effect of solvent type and duration of extraction on the soybean oil quality that produced. The research was conducted in Chemistry and Biochemistry Labotratory, Faculty of Agriculture, Mulawarman University. This study used 2x3 factorial analysis arranged in completely randomized design (CRD) with 4 replications. The first factor was the type of solvent: Chloroform and Petroleum Benzene. While the second factor was duration of extraction : 2 hours, 3 hours and 4 hours. Data were analyzed by ANOVA and followed by LSD test at α 5% level. The results showed that the type of solvent and duration of extraction gave signifigficant effect on yield but did not give significant effect on acid number, sensory characteristics for color and aroma. The best result was showed for petroleum benzene solvent and 2 hours extraction, which gave yield, acid number, hedonic characteristic for color and aroma were 22.82% ; 1.82 ; 3.73 and 3.49 respectively.
